A Perfect Cooking Method for Authentic Masala Dosa
Ingredients:
For the Dosa Batter:
- 1 cup rice (preferably parboiled rice)
- 1/4 cup urad dal (split black gram)
- 1/4 teaspoon fenugreek seeds (methi seeds)
- Water for soaking and grinding
- Salt to taste
For the Potato Masala Filling:
- 3 medium-sized potatoes, boiled and peeled
- 1 medium onion, finely chopped
- 2-3 green chilies, finely chopped (adjust to taste)
- 1/2 teaspoon mustard seeds
- 1/2 teaspoon cumin seeds
- A pinch of asafoetida (hing)
- 1 sprig of curry leaves
- 1/2 teaspoon turmeric powder
- Salt to taste
- 2 tablespoons oil
For Assembling the Masala Dosa:
- Dosa batter (prepared as mentioned above)
- Potato masala filling (prepared as mentioned above)
- Oil or ghee for cooking dosas
- Coconut chutney and sambar (optional, for serving)
Instructions:
- Prepare the Dosa Batter:
- Wash the rice, urad dal, and fenugreek seeds separately.
- Soak them in water for at least 4 hours (or overnight).
- Drain the water and grind them together to form a smooth batter. Add water as needed.
- Add salt to the batter and mix well. Let it ferment for 6-8 hours (or overnight) until it doubles in volume.
- Make the Potato Masala Filling:
- Heat oil in a pan and add mustard seeds. Once they splutter, add cumin seeds, asafoetida, and curry leaves.
- Add chopped onions and green chilies. Sauté until the onions turn translucent.
- Add turmeric powder and boiled, mashed potatoes. Mix well.
- Season with salt and cook for a few minutes. Remove from heat.
- Cooking the Masala Dosa:
- Heat a non-stick dosa tava (griddle) or flat pan.
- Pour a ladleful of dosa batter onto the center of the tava.
- Spread it in a circular motion to form a thin dosa.
- Drizzle oil or ghee around the edges.
- Once the dosa turns golden brown, flip it over.
- Spread a portion of the potato masala filling on one-half of the dosa.
- Fold the other half over the filling to form a semi-circle.
- Serve hot with coconut chutney and sambar.
